Spaghetti Sardine in Hot Tomato Sauce



I craved for the hotness of bird's eye chilli (or chile de arbol) and the sourness of tomatoes last night. Hence I stopped by a grocery store and bought 3 cans of sardine..2 for keeping and 1 for cooking :) I gotta say everyone prefers cheap but quality goods aite? *laugh* so this little me bought sardine of seri melati brand..



before it taste so nice..just a hair lower (in taste) as compared to Ayam brand (in my humble opinion lah) But then that day, the bones were quite sharp, pearcing our tongue T___T really wierd..xde iso ke? but then the taste is still quite delicious..so xpe la...da beli extra pon :)

So this time a present a time saving, saliva dripping, low cost spaghetti sardine fer ya'll

Ingredients

5 chille de arbol/cili padi* according to preference (hot :medium-high)
2 bulb of big onion
2 tomatoes (big size)
1/2 tbs black pepper
1 can sardine (the normal big size)
1 tbs corn starch
1/2 chicken/anchovie cube
3 tbs vege oil
salt to taste
and of coz yer spaghetti la kan (go for 4 persons serving)


Methods

1. Cut into cubes - big onion, tomatoes

2. Mince yer chille de arbol

3. Stir fry the onions until fragrant. It'll take about 2-3 mins onli




4. At the same time, make sure to boil yer water and put in the spaghetti on another stove. Usually i did it before i start making the sauce. Add in 1 tsp of salt with 1 tbs oil and stir abit while boiling. This is to avoid the clumping of the noodles.



5.When frangrant, pour in the contents of the canned sardine, put in a lil water to gather all tiny bits..we dun wanna waste ait? everything is money these days.. stir while breaking the fish pieces to tiny bit and stir..the oil'll stings the hand a lil, so i advice ya'll to wet the hand that you use to hold the ladle a lil..but not till drippy lah..

6.Then put in the darling lil chillies with the black pepper..stir nicely..when mixed well, you'll havta dump in the rest of the cubed tomatoes..juz put in everything..Add a cup or 2 of water and let it simmer awhile..hmm...i think about 10 mins like dat...stir abit once a while to make sure it didnt stick on pan.

7. Adjust the taste with salt and chicken/anchovie stock. If its too watery, put in the corn starch..if its not, let it be :)

Done!



Coz i made it for 4 persons and mia familia only consists of mia hubby and me, so there's lotsa leftover..I made em into sandwiches for the next day's breakfast..just add in 2 tbs of mayo inside and stir..i made it for the whole bantal of gardenia bread :P I even packed the extra for my labmates after i packed enough for my darlin' hubby..hoho

p/s : anyway, if u dislike the fishy smell of sardine, u can squeeze some lime in..

Chicken feet with shitake mushroom stew; Yue's style

Haha..i juz make up the name while writing the title..Am not sure what I'm cooking, its a receipe from my mom when I was a lil kiddie. I made this last night after I make chicken percik for dinner for my darling hubby. *sigh* I went home late, again. At about 9.45 pm this time, and I determined to let him eat something decent from the house's stove..really pity him. So, this was suppose to be his breakfast, of coz, with white rice.

Well, it might look gross to someone, but really it tastes really good..succulent tender meat tempting your soul..if you cook it correctly though *laugh* So, for a start, try it first before judging. My hubby were scared of it, but once he tasted it some time ago, he became addicted to it

For 4 hungry zombies

Ingredients

1/2 kg of chicken feet (cut off the nails, peel any hard skins, chopped the feet into to parts; its long 'arm' from this spread 4 toes foot)
5-7 cm of ginger - julienne or slice thinly oso can5 garlic - julienned
3 big onion - cut to half and slice thinly5-7 mushrooms, depending on the size, if big put 5, if small put 7 - cut into 4 (vertically then horizontally)
1 tbs thick soy sauce
1/4 cup light soy sauce (i subtituted both with a local sweet soy sauce and salty soy sauce, tamin brand)
3 tbs vege oil
1 1/2L filtered water
some pepper


Methods

1. Use a pot, quite a big one and pour in the oil at medium fire. Put in big onion, garlic and ginger and stir fry em until fragrant + translucent (for the onions of coz)




2. Wash the feet properly. Drain away any blood present, sieve by using a colander, and dump in all of em into the pot like below. Then stir again for 3-5 mins.

3. After the chicken feet turned a little translucent (you will notice if you see em properly). Douse in both of the soy sauce, thick one, and light one. You have to homogenize the solutions and pour the 1 1/2 liter water in. Well, to me as long as the water is about 1 1/2 inch over the chicken feet, its fine d..Cover the lid and simmer at the lowest fire for at least 1 - 2 hours. Then just throw in the mushrooms inside and simmer another 1/2 hour. Below is what it looks like after the simmering.




4. Always stir when the water becomes little so that yer 'feet' and 'mushy' din stick to the pot..The sauce right now will be sticky and delicious. Taste it and adjust accordingly. If too salty or thick to your taste, put in some water, if to bland put in sumore light soy sauce, little by little. Dont just dump in a cup, your heart cant stand it then haha.



5. At the end of the day, put a lil bit of sesame oil and stir after you switch off the stove.

Well then, serve with hot rice!



Seriously delicious :)

p/s : It can actually be cooked in a crock pot, juz leave it overnight at low, so that you wont have to wait for it. For me, i didnt use crock pot, put i cook partially and continue to simmer when i want to eat.

Sup urat kenting UK



Monday's delicacy still shrouded my mind as my hubby took me to the all famous restaurant named 'sup urat kenting UK' (famous from blogs of coz). There's also an article from the main local newspaper about it (you can read it here, its in BM). Am not sure what does the UK stands for (takkan la united kingdom..ulu klang kot haha..or mebe uncle karim kot..geez..at last maybe its just spells out its name^^;;), but urat kenting are the tendons or joints of a cow. It is said that the parts were simmered for long hours until it becomes tender and melted into the mouth when eating it.. *saliva dripping*.. so lovely! The soup was heavily spiced up with lotsa herbs..so it really warms the tummy with a hint of spicyness while tasting the light delight of soft spongy materials in the mouth..the veges present that i detected were some crunchy celeries and tomatoes..which really complements the softness of the tendons and brings up the flavour ;)

We reached the eatery at about 9.30 pm since I have some labwork that I still didn't complete. Well, its actually about 15 mins drive from serdang, which is really near tol sg. ramal. A lot of restaurants were located at the same area. At that time, its already packed with people.. hmm alotta people eat out lah these days. We got a seat inside and ordered the all famous soup, some satay (seasoned chicken skewer) and fried rice (pattaya and thai)

The satay reached us within 5 mins.



Its 80 cents/piece, quite expensive, but worth it..since the meat were alot..i ate about 4 or so i've already felt full..alamak, macamane ni ^^;.. The soup came in about 15 mins later (RM 7/bowl now i think).. and the rice came in about 30 mins after the soup. Its a long wait, but since the fried rice were really delicious and hot from stove, i dont really mind..My rice, thai fried rice, didnt feel like thai at all coz it lacks the synchronizing taste of sweetness, sourness as well as saltiness, but nonetheless, still nice and acceptable. At the end of the day, i have to shove the rice in coz im so so sooo full..

It's a really happy day heheh~ :) I'd give 7.5/10

Homemade tomyam paste

Preparing your own tomyam paste

Ingredients
- 4 tbs vegetable oil
- 3 lemongrass (2 of em must be smashed a lil to get the aroma out)
- 3 tomatoes*
- 2 big onions*
- 2 x 3 cm galanga (the greater one - do google it to check)/ lengkuas - julienne coursely
- 2 handful of chile de arbol/cili padi*

Method
1. Blend the ingredients with (*) with the addition of 1 lemongrass until smooth (cut the lemongrass in question into small pieces)

2. add in oil into skillet and heat it up at medium level

3. pour in the blended paste into your skillet. At this point, you must stir continuously until the oil came to the surface in small bubbles at the edge of the paste

4. add in yer leftovah lemongrass and galanga and stir summore

yep its done, you'll get the aroma by then..this paste is to make 4 servings of tomyam soup :)

Chili paste

How to make chilli paste for cooking

-fresh chillies - grab handful of fresh red chillies (no matter whats the number), cut to small parts (around 1-1 1/2 inch) and blend them with minimal water (make it around 1-2cups). YOu can remove the seeds if you want. Make sure its in paste form, if its not, add more chillies

-dried red chillies - cut the dried chillies to small pieces, boil them at medium heat until all the seeds come out and sink to the bottom. After the wrinkled dried chillies started to look like fresh chillies, close the fire and scoope out the surface using a ladle with small2 holes. You can also use a small seive. Blend with minimal water. Usually I use the whole bag of chillies and turn them to paste and keep in fridge. But remember this chilli paste won't last long if you didn't fry them first.

Tamarind juice preparation

How to make a tamarind juice for cooking

- fresh tamarind - break the pod and take the fill within, put in some water and knead with your fingers (make sure not cuts on ur deinty fingers, coz it'll be oh so much pain since its acidic). The right final result would be to obtain a viscous brownish liquid, extremely sour. Use more tamarind if the liquid is not viscous enough. Then seive! Take the liquid only.

- tamarind in a ball form - take out like one handful and dilute with water. Do remember so seive the solution in order to separate all the impurities

Chocolate Ganache

Suddenly i remembered about this sweet liquidy purrrfection when i feel like eating ice cream. Maybe not everyone knows how to prepare this. Chocolate ganache is a term used for liquid chocolate prepared from double boiling procedure that is usually utilized in preparations of cakes or cookies or toppings of anything sweet (personal definition ni.. XD). I used to put this on my steam cakes and ice cream :) An example of a readily substitute that can be obtained from the supermarket is Hershey's liquid chocolate. I think its about rm15-20? to me that's quite expensive.

The catch is, i used to prepare chocolate ganache from leftover chocolate from my fridge :P normally we use cooking chocolate lah. nonetheless, it still tastes good. Hence, this is my version of ganache, i think a bit more healthy and cost saving haha :)

Ingredients
1/2 chocholate bar - the biggest one (cooking chocolate or juz abt anything u have)
2 tbs butter
4 tbs sweetened creamer (susu pekat manis)
2.5 tbs coco powder (i use vanhouten)
1/2 teacup water

Procedures

1. Use a deep pot and fill it with 1/4 of water, and put another small stainless steel bowl of any kind on top (it must touch the water). Your chocolate will be made inside the stainless steel bowl. Hence you must make sure the amount of water does not boil off, or the splashings from boiling doesn't reach your hand when you handle your chocolate. At the same time, the water shouldn't be too much until it drowns your chocolate when your steel bowl gets heavy.



2. chopped your chocolates to small pieces, dun put in the whole bar! it'll take longer time to dissolve :P i usually chopped em to pieces of 3 mm like that.

3. put in the chopped chocolate and a small piece of butter (i use about 1-2 tbs) into the bowl before the water started to boil. (in my case, i prepare the choco 1st in the bowl and set up the double boiling pot when everything's ready)

4. use a spoon on one hand to whisk the melting chocolate gently while holding the bowl with another hand (please wear your kitchen mitt)

5. add in sweetened creamer, about 2-5 tbs, depending on the sweetness of ganache that u'll like to prepare.

6. add in cocoa powder, about 1-2 tbs, depending on the bitterness of your ganache that u'll like to achieve. (i love to make my ganache to a more bittersweet-like taste, feels more adult, and my mother-in-law likes it that way) You must adjust accordingly.

7. lastly put in water little by little while mixing it gently with a spoon. dont make it too light..must be a bit more viscous except that if you want to drench your cake to be a chocolate moist cake :)





The liquidy chocolate toppings on top is chocolate ganache (not considering the chocolate rice yea). 1st time i made a steam chocolate cake abt 2-3 years ago XD

Banana Split Ice Cream

Easy receipe w/o cooking, the banana split ice cream i made using wall's ice cream if im not mistaken, with rainbow colour hoho

What you'll need will be;
- 1 banana, slice to half
- 2-3 scoops of ice cream (just use a big spoon or a ladle will do, make sure to maintain the shape to roundish
- honey
- chocolate rice
- chocolate ganache (*optional, not shown in pic)

Preparations

Arrange following the picture; banana first, ice cream, honey and lastly chocolate rice..its really nice if you put crushed almonds or any kinds of peanuts :)

Tomoro got meeting for lab session d..1030. This semester, 2 of my labbies and i will not be assisting my supervisor's lab session of biophysical chemistry. I heard that we will assist in fermentation technology of our co-supervisor's lab *sigh* xpe daaa~ xkesa...

Today juz now baru jek attend meeting for GRA scholarship. Dem the person who talked didn't know left nor right to what he's talkin'. Watlaweh~

Hokkien Mee aka Mee Udang Penang

I have been trying to make this Hokkien mee receipe for I dunno for how many ages but still did not have the time for it. Still remember..it was my fave when I was a lil kiddie before. The uncle hawker was kind and fast at making the noodle. Good ol memories. *smiles* Last week was the point of no return, as all the ingredients were smiling upon me at Pasar Borong Selangor *chuckles*

Hence, I would like to share with you guys my own rendition of Hokkien mee using prawns prawns and prawns :) It's like the heaven of prawns~<3 (Sori Jijong, jgn temuntah XD) Coz if you go to pasar borong selangor, you'll see soooo many cheap groceries, wet items and fresh veges~<3 Its like asking you to go for a shopping spree weee! For 4-6 servings Ingredients   

For broth
1 cup of dried shrimp
2-6 tbs of chilies paste (can be chili boh/or chili blend/chili powder) - dont forget to turn it into paste form
1 medium sized big onion or 5-6 shallots
3 small garlic
salts and brown sugar to taste
4 tbs vege oil
1/2 cube fish stock (anchovie stock)

For toppings
*30-50 cents bean sprouts (the chubby2 one from soybean, if dont have green bean oso can) so it can also be around 2-3 cups
1/4 kilos shrimps (medium size) - about 4-5cm in length [the bigger the better, but can reduce the number of shrimp]
*4 bok choy trees
2 hard boiled eggs
*2 cups of fish balls
fried shallots

*1 pkt of yellow mee/noodles (the wet oily noodle)
*1/4 pkt of meehoon/ vermicelli



Procedures

Lets make the broth first :)

1. Wash your dried shrimps and soak them in about double to triple the number of cups you put in. Leave it awhile to swim happily.

2. In a wok, blend your big onion and garlic for about 30 sec and stir fry them until translucent and frangrant. It'll take some time. Make sure no water is present before entering the next step.

3. Add in your chillie paste, 2 tbs (mild), 4 tbs (a bit hot), I'd prefer about 6 tbs bcoz I can save some for the side paste. Use your ladle and stir until the oil came to the surface.

4. Move out all your chili+onion paste (from no.3), leaving the reddish oil behind, use the oil to stir fry your yummy shrimps for about 1 min, you can put a bit of soy sauce and salt to taste. put aside.

4. Blend those gorgeous soaked dried shrimps with the water togather for about 3 min. Must make it smooth. but not necessarily too smooth :) Pour em into a big pot when you put in together your paste (no.3) after topping up the water until 3/4 of your pot (I think its about 1.5L or so). Simmer with a close lid at low fire for at least 30-45 mins.

5. While waiting for the broth to be done, blanch your ingredients with the (*) sign lol..not more than about 30 sec each k. The easiest way for me is by boiling hot water in a pot and pour em on those goons and time it 30 while dancing :) Use a colander to filter your stuff and put aside.

6. Check your broth, remove any orangy foaming on top of the gurgling liquid. Use yer pretty ladle ait. After about 45 mins, put in 1/2 cube of fish stock, salt and brown sugar. Adjust accordingly. Please use your darlin lil tongue to taste it kay.

7. Everything's done, arrange from bottom to top in a bowl;

- 3/4 noodle, 1/4 vermicelli
- yer beansprout (cover the whole bowl)
- side by side: 1/2 or 1/4 hard boiled egg, bok choy, few fish balls, 2-3 prawns
-sprinkle; dried shallots

8. pour in your broth, and wallah! it'll be so dem delicious! Trust me.

So, my hubby loves it a lot.. He hates beansprout, but he ate em all yehhaaaa!

Manga review: The Embalmer

I was actually looking for a new manga to read today. I've screened and screened and screened mangafox. The updates were mostly new mangas which means I have to wait for future episodes after reading 1, 2 chappies. I hate that the most *sigh*.

I think I've read about +-10 new mangas at random before I stumble upon 'the embalmer'. The title caught my interest since I dunno what's embalming is *abit embarassed* Then when clicking on the first page, the first word was the definition of an embalmer; people who performed preservation and restorative techniques on the dead even if it was disfigured terribly for funeral. It's actually a science+art procedure combined together. Very interesting. My heart was touched many times throughout my reading. Am ashamed to admit I shade a couple of tears along the way :P

Currently at chappie 29, earlier chapters (1-4) were up to 100 pages/vol, hence its a lot to read. It has just been continued to be scanlated this june 10 after it stopped about 2 years ago w/o any update. Althought I'm not sure about the current status, it seems as if it is updated about once/week or more with about 30+ page each time.

This manga follows the life of an embalmer in Japan, Amamiya Shinjyurou, at which he practices his work at an environment that scrutinized men of his profession due to the narrow mindset and misconception present. But due to his unyielding behaviour, he gave salvation to the living by letting them to be close to the dead whom are dear to their heart. From this, he desperately tries to understand the meaning of living and the beauty of treasuring it.

The ultimate love given by not giving, the desperation of the living clinging on to the dead, the paradox of living and dying, you can found every questions that you ever ponder to be illustrated here in such a heart wrenching way. It is a very good manga which deserves a lot more than it should.

I think adult reader would truly appreciate this manga, men or women alike.

One of the dead that has been embalmed. A ballerina died of a tragic accident that damaged her face and sever her legs. The beauty of embalming is that the dead is presented in a form that it looks like he/she is just sleeping peacefully for eternity and is sterile to be touched by discarding all tormenting moments of disease, sickness, and tragic death.

A-class manga. I tell you.

Manga review: 07 Ghost

An interesting piece of manga I found few weeks ago known as '07 Ghost' with 60 eps to date (I only able to reach 42 currently). All this while, I never bothered to read it until it's up on Mangafox's hot pick of the week. Don't blame me, there're thousands of mangas out there, its like getting the needle from a gigantic pile of haystack *chuckles* and the review was too simple, it didn't ignite any interest at me at first.

To me, the main characters as well as the plot were extremely well written. The characters' individual personalities has been impressively expressed through the course of the story. The drawings/illustrations were thorough and detailed. The way the story was told is also perfect to catch the heart of readers. I never found any background columns left blank. The downside is, if the readers didn't truly immerse themselves in the plot, they'll be easily lost because it was really complex and thrilling (to me of course). Another thing is, when there's action, the drawings became too crammed with lotsa details, so I'm a bit lost again *laughing*. Anyway, I truly recommend this great manga to all, I think adults would like this more then small kids because its kinda deep and touching laced with actions, emotions and the sense of finding oneself through searching for true happiness. You'll get what I said when you read it. Please do, this manga totally deserves everyone's attention.

The bad guys from the military team, The blackhawks, able to manipulate Wars and Warsfiel (they're gorgeous!!)


Everything starts with Teito Klein, the main character (I think he's about 14 or 15), the son of a king from a previous nation being conquered by the current country, Bursburg empire, turned amnisiac slave (Due to seals, his memories were blocked). He was ordered to enter a military academy and topped up to 1st rank due to his excellent brain and brawn. When he found out the truth about his parents he ran and was saved by the church. In this story, the king and the pope holds equal power in the nation. Hence, the church is an ideal place for refuge to everyone without descrimination.

The religion in this region based on the concept of 07-ghost, 7 gods descended from heaven to protect the seals on Verloren, the evil god who has been exiled to earth, separated its strength from its body, at which the strength is sealed in the 'eye of mikhail', owned by teito currently, as the heir of the Raggs kingdom. So, Teito seek refuge in the church, obtained his position as the apprentice bishop to Frau who holds one of the power of the 7 ghost before embarking a journey to find himself and to seek the truth behind the fake history written in books. *chuckles* It's interesting right?

In this world everyone has an energy called 'Ziphon' which can attack, heal or manipulate, depending on the person's personality. To top it off, there're evil henchmen of Verloren called Wars, attacking innocents. An A-class action packed manga which can satisfy your hunger. I guarantee you.

Manhwa review: Freezing

So cold *freezing* am so low spirited today..yesterday was really tiring..me and my hubby went to Nilai 3, a really big textile town..so tired, have to walk so far, and no aircond summore..so I was sweating like hell *laughing* but the best is all the clothing materials, interior decos as well as carpets were really cheap! The key point is that you must haggle haggle and HAGGLE!! if not you'll be shoved into the merchants pockets hoho

Today I would like to intro another action manhwa from Korea. The title, "FREEZING". Currently, there are 32 chapters to date. Full of chicks, their bodies are fan service types heheh, but actually the storyline are really superb, a combat type manhwa. I think boys and girls would like it, but please not the faint type, since it has a bit of gore although it is not written under the genre. I recommend this manhwa to peepz age 13 and above.

Some of the important characters.

The storyline tells us about aliens from a different dimension trying to conquer us. And the people able to oppose them are young women warriors trained from a school built by an organization known as Genetics; like Valkryie right? nope2, the guys are also involved with battle, but as protector or shielder known as limiter. This segregation were in place due to only women being able to receive the 'stigmata', the source of their combat power, hence placing them as the attacker. The men receive the power of the limiter from the women through some sort of contract.

So this story revolves around a young enthusiastic boy named Aoi Kazuya with extraordinary limiter power which can freeze space with an A grade student Satellizer L. Bridgette whom everyone is afraid of. Can't tell you much, dun wanna be a spoiler lol.


Part of the plot. The gal is elizabeth mayberry, 2nd in rank in the school.

Manhwa review: Nobelesse

This manhua I'm introducing this time is an internet origin manhua. It means, the vertical panel is verrrry long, one must keep on scrolling down and down before going for the next page. The updates are not too frequent. Hence, I have to wait for quite some time to read this manhua. Another thing is, every chapter is very little (around 9-14 pge only). I suspect this is due to the really long panel lol

This manhua revolves around few school kids who associated themselves with a vampire of noble origin. The catch is, this vampire, Rai, has juz wakey from a slumber of 840 years. Hence, he doesn't even know about how to open doors, or play games, or ramen. So, he went to school with those kids, posing as a new cocky transfer student *laughing*. Its really comical, seriously. The storyline is well written, although the background of the panels are always left out blank. The bad guys are rather plain, but sufficient. And of course I love the 2 main characters, they're such a bishie!! The drawings of the character are really nice.

There're about 45 chapters of Nobelesse to date. I recommend this especially to girls who aren't scared of abit of gore, its really worth it. For the bishies of course. really. I tell you.




OMG~ so macho..cannot stand!!!

Manga review: Guardian Dog

what a day..i haven't been writing for like a semester right? 1/2 year..already omitted out the troublesome background :) Today i went to a different restaurant to have my lunch. bottom line. its super sucks. i thought its a malay shop, manetau mamak shop full of smoking cocky students T.T *sigh* my head felt heavy today..aiyaaa..

Well, its a story that's kinda deep at which one has to decide to go to d good side or d bad side. The good side is by destroying humanity, while the bad side is by protecting it. The defying of God. All starts from a single simple student named Kurosaka Gengo who has been consumed by Six Eyes, a parasite from space (I know it sounded nuts lol). The artist makes the storyline sensible, with lotsa action and drama that involves emotions. Its a balance manga which has a lil bit of love, a lot of action, a bit schoolish and innocence as well as human. One will really enjoy this especially boys, I think lah. The ecchiness is not much, juz a bit of fan service..

The ending was kinda abrupt, but satisfactory. One will not understand the relation of the title to the story unless manage to finish it. I recommend it greatly to all.
